Quitting Grilled Cheese Sandwiches (and bread) Cold Turkey

To be honest, I don’t recall making or ordering a grilled cheese sandwich ever. It was something my mom would make on occasion. Yet at the start of my self-isolation during the pandemic I ordered this little Panini Maker at whim.

Two slices of bread, a slice of cheese and just a tad bit of butter makes for a fast and easy comfort food. I started making a grill cheese sandwich about every day with breakfast. But guess what happened to my triglycerides and blood sugar? Not good.

So today all forms of wheat went into to garbage. I am back to old-fashioned oatmeal with fresh berries and pecans for breakfast—with a Spanish style fried egg every other day. I am also adding more boring things like beets and sauerkraut to my diet. Sure, I will have an occasional pizza and burger, with “occasional” being the key word.
