Stoplight Stuffed Peppers

I awoke today to an odd dream where my mother served us stuffed green bell peppers. I don’t recall being a kid in the dream, but I do remember the green peppers, as that was the only color available back then. I would not have remembered the dream at all except that I jotted “green peppers” down in my journal on the nightstand next to my bed.

Before it came time to shop for the week, I had looked up some recipes for “stuffed peppers.” There are dozens, but I took the one for which I had most of the stuff in-house. In retrospect I gave it a B-, so I am not going to link the recipe here – more exploring to come!

There’s not much to them – a half pepper, rice, hamburger, green onion, canned tomatoes, green chilies, lots of spices and a little cheese.

So, I picked up some red, yellow and green peppers, Mozzarella cheese and some organic grain fed burger meat. Peppers are on the bad list of pesticide contamination, so after halving and cleaning them, I let them soak in a baking soda/water bath for a half hour – a proven method to rid the surface of that harmful stuff.

I’m not a big rice fan, so Jasmine brown rice is all I keep in the house. With the rice on its own in the steamer, it took less than a half hour to create this interesting dish. Peppers are a good source of all kinds of good nutrients and micro-nutrients.
